The market visit slows down around the ingredients themselves. Your guide explains what is in season, how mushrooms and fresh produce are used, and why the character of a Yunnan dish begins long before the pan is heated.

Three dishes, one shared table

Prepare Dai-style Ghost Chicken, Yunnan Small Pot Rice Noodles and Paoluda with step-by-step instruction. At 12:15, the class becomes lunch: the group sits down together to enjoy the dishes made from the morning's market ingredients.
